Easy crust & Banana Cream Pie



The Crust....

                                    


This pie crust recipe is for custard/cream pies the kind you bake ahead and add custard  after it's bake. I am still in search for good pie crust for a fruit pie filling you know the kind of crust that's flaky and you bake filling & crust together.Don't worry I have confidence now that with the internet I will find it and as always I like recipes that are great tasting, and the easiest route I can find to come to that conclusion!~



1 cup flour
1 TBL. powdered/icing sugar
1/2 cup butter (1stick)
1 egg yolk

in a bowl whisk flour & sugar together, cut (rub) in butter until the butter added is the shape of small peas, add egg yolk, mix together with your (clean) hands, make sure all flour is mixed in well to make a binding dough.
place in a 8 or 9 inch pie pan press dough all over bottom & sides evenly to cover pie pan.
with a fork dot holes all over bottom (to prevent crust from puffing up).
Chill in refrigerator for half hour or 15 min in freezer.

Bake in a 350F/175C preheated oven for 25 to 30 minutes or until golden brown

cool add filling and serve.

I always use real butter for this recipe because margarine has more water in
 it and texture is not as crisp.
this is the same pie crust recipe i use for the my banana cream pie, it's a great easy to make for any cream pie.

The Pie


Pie filling Ingredients: when in America 
2 large or 3 med size ripe Bananas (yellow not brown)

1 large (5.1oz) packet Vanilla Jello instant pudding 

2-3/4 cup cold milk

Cool whip or any kind of whipped topping you like

pre-bake pie crust and let cool, 
Slice bananas and spread all over cooked & cooled pie crust. 
In a bowl add milk pour pudding mix in and beat with a wire whisk until blended (not too long so it doesn't thicken too fast)
pour over bananas while mix is still runny so that it seeps between all the banana's. let set in refrigerator for 15 to 30 mins until firm, top with whip cream.

When in Australia:
1 pkt. Coles instant pudding
1-3/4 cup milk
2 large banana
Topping: 
1-1/2 cup Thickened cream
2 tablespoon sugar
1 teaspoon vanilla 
Slice bananas into cooled pie shell spread evenly over the bottom of the crust
Beat milk and instant pudding for 1 minute, spread over bananas covering them all, chill for twenty minutes or until firm.
For topping::
Whip together thickened cream, sugar and vanilla until cream is stiff spread over pie until completely covered let chill another thirty minutes before slicing 

** Jello pudding mix might not be available where you live, you can use any pudding mix or recipe, that you like they have so many good ones made from scratch with milk & egg yolks...this recipe is easy for me I love it and it taste great..Enjoy!
